Tasting Notes
Denny Bini farms one hectare of organically grown vines at Coviolo in Reggio Emilia, working with indigenous varieties and the traditional method of bottle refermentation that his grandfather's generation practised before the industrial age replaced it. The Levante 90 is his white frizzante, a blend of Malvasia di Candia, Spergola and Moscato — named after the east wind (levante) and the angle of the vineyard's row orientation. After brief skin maceration of 4 to 5 days, the wine ferments spontaneously in stainless steel, then referments naturally in bottle without disgorgement or filtration. Aromatic, lively and slightly hazy: dried flowers, honey, yellow stone fruit. On the palate it is vivid and juicy, with a defined tannic structure from the skin contact and a fresh, aromatic finish. Good with cured meats, fish and the rich dishes of the Emilian table.
