Tasting Notes
Spergola is an ancient white grape native to Reggio Emilia, a variety of Sauvignon Blanc that has grown in this territory for centuries. Cinque Campi's L'artiglio ("the claw") is a serious statement for the grape: a traditional method spumante aged 40 months on lees before disgorgement. From organically farmed vineyards on clay-sandy soils, the base wine ferments with indigenous yeasts, then ages in bottle developing complexity and a firm autolytic structure. The result is precise and mineral, with notes of citrus, white peach, dried herbs and a yeasty brioche character from extended lees contact. Long and fresh on the finish. An exceptional match for seafood risotto, river fish and aged soft cheeses.
