Camillo Donati's Lambrusco is the quintessential expression of what this grape can be in the hands of a thoughtful farmer. From organically farmed vines on the clay hills south of Parma, the wine ferments naturally with indigenous yeasts, then referments in bottle in spring without disgorgement, leaving a fine sediment and a persistently lively mousse. Deep ruby with a violet tinge, it offers dark cherry, blackberry and a fresh herbal note. On the palate it is dry, food-driven and energetic, with bright acidity and a pleasant tannic bite that cuts through the richness of local salumi and pork dishes. One of the benchmarks of natural Lambrusco.
