Tasting Notes
Humus is a small biodynamic estate in the Lisboa wine region of Portugal, working with indigenous varieties on a philosophy of minimal intervention and deep respect for the local ecosystem. The Flui is their pét-nat white, made from native Portuguese white grapes fermented spontaneously and bottled before fermentation is complete for natural refermentation in bottle. Unfiltered and undisgorged. The name captures the spirit of the wine: fluid, natural, in motion. The nose is expressive and aromatic, with citrus, stone fruit, wild herbs and a gentle yeasty note from the lees. On the palate it is lively and fresh, with a soft persistent mousse and a clean, dry mineral finish. Good with local seafood, bacalhau preparations and as an aperitif with olives and bread.
