Tasting Notes
San Vito is Valli Unite's single-vineyard Timorasso: a step above the Derthona in the hierarchy of the estate, from a specific named parcel within the Colli Tortonesi that expresses the variety at its most concentrated and structured. The same philosophy applies — organic cooperative farming, spontaneous fermentation, no filtration — but the San Vito vineyard's particular exposition and soil composition produce a wine of greater depth and cellaring potential. The 2017 vintage is now entering a fascinating mid-to-late stage of evolution. Timorasso built for ageing shows its best qualities after several years: the petrol and mineral notes that develop with time, the honeyed depth from the lees, the persistence of the variety's characteristic acidity that holds everything together long after younger wines would have faded. On the palate it is powerful and mineral, with a long, structured finish. This is a wine to open with proper food and real attention. Good with aged Piemontese cheeses, white truffles, fatty fish, and richly sauced pasta.
