Tasting Notes

The Rapsani Old Vines is the estate's single-parcel prestige expression of the appellation: from Tourtoura, a 0.35-hectare block within the Prosilia vineyard where the vines are 67 years old, predominantly Xinomavro with a little Krassato and Stavroto. Rapsani is one of Greece's few PDO appellations requiring a specific blend of three indigenous Thessalian varieties: Xinomavro provides structure and intensity; Krassato and Stavroto, local to Thessaly, soften its rustic character and add approachability without sacrificing depth. Iron-rich schist soils at altitude, certified organic, no irrigation, low yields. Wild yeast fermentation; ageing in second-use French oak, then stainless steel and bottle. Complex bouquet of dried cherry, currant and tomato leaf — the Xinomavro signature — with herbs, spice, ink and leather; juicy and medium-bodied, vibrant acidity, ripe and structured tannins, long finish. A serious Rapsani for the cellar. Good with lamb, game, rich pasta dishes and firm cheeses.
