Tasting Notes
The Abbaye de Mont is a small winemaking project based in the canton of Vaud in Switzerland, working with Chasselas — the emblematic white grape of Swiss viticulture — on a site with deep historical roots. Made using the traditional method, with secondary fermentation in bottle and extended lees aging before disgorgement. The result is a rare Swiss sparkling wine with genuine character: Chasselas, which in still form expresses the mineral and floral terroir of the Vaud hillsides with understated precision, translates well to the traditional method, where lees contact adds a creamy texture and subtle autolytic complexity while the grape's hallmark freshness remains intact. Pale gold with a fine, elegant perlage. The nose shows lemon, white flowers, stone fruit and a gentle bread note. On the palate it is precise, mineral and long, with a clean dry finish. Good with lake fish, fondue and delicate first courses.
