Tasting Notes
From Demeter-certified biodynamic vineyards in Wettolsheim, on loamy limestone and gravel, the Barthelmé brothers craft this Crémant using traditional méthode champenoise. A blend led by Pinot Blanc and Auxerrois, with Pinot Gris and small amounts of Pinot Noir, it spends a minimum of 24 months on lees. The nose is clear and precise: fresh apple, citrus peel, orange blossom and a light toasty note from lees contact. On the palate it is crisp and taut, with a fine, persistent mousse, gentle salinity and a chalky texture that lifts it well above most Crémants. Excellent with oysters, smoked fish and light starters.
