Comme Un Rouge — "like a red" — is the estate's most individual wine and its most talked-about. It is a Chasselas vinified by maceration on the skins for 40 days with spontaneous fermentation and indigenous yeasts, then aged for 12 months in French oak barrels on fine lees with three bâtonnages per week. Certified Demeter biodynamic and Biosuisse. Allaman, La Côte, AOC Vaud. The result is unlike any other Chasselas in existence: an orange-robe wine from Switzerland's most neutral white grape, showing white pepper, fine tannins, dried flowers and the slow-building warmth of a long skin contact. The colour recalls a Provençal rosé on a warm evening. The name says everything: it is Chasselas thinking like a red. Good with aperitifs, seafood, vegetable dishes and mild cheeses. Aging potential of 3 to 5 years.
