Tasting Notes
Volpe Rosa is their most distinctive rosé and one of the rarest wines in this catalogue: 100% Coda di Volpe Rossa, a pink-skinned ancient mutation of Coda di Volpe found only in the Irpinia hills of Campania, from a vineyard of 40-year-old vines farmed biodynamically at 500 metres. This grape barely exists anywhere else. Two days of skin contact, then spontaneous fermentation and twelve months of ageing in used chestnut barrels; bottled without fining, filtration or added sulphites. The 2020 is from a matured vintage — expect Mediterranean herbs, small ripe red fruits, honey, dried flowers and light essences. On the palate: lively, rustic, invigorating freshness, a fine tannic grip from the skin contact and a vibrant volcanic mineral quality that keeps the sip agile. A rosé with the soul of an old-vine Campanian red. Good with tuna carpaccio, seafood, pasta, pizza and the full Italian table.
