Serra Oca comes from Quinta do Olival da Murta in Portugal’s Lisbon wine region, near the Serra de Montejunto, locally called Serra Oca. The mountains and the nearby Atlantic create a special microclimate, with cool, misty mornings that slow ripening and help keep the wines balanced. They work only with Portuguese grape varieties and follow certified organic farming, with a focus on regenerating soils and rebuilding a biodiverse ecosystem plot by plot. Pruning and harvesting are done by hand. In the cellar, the rule is simple: spontaneous fermentations, nothing removed, nothing added, except small doses of sulphur to protect the wine.
